Cauliflower Pizza Crust

Let go of the grains in your pizza with a cauliflower crust

Cauliflower is the hot new go-to vegetable for many mindful eaters who are trying to avoid wheat or all grains entirely. You can make a delicious no-carb crust for your pizza by using cauliflower as a base, making it a lot healthier than the old-fashioned wheat crust.

  • 1 head of cauliflower
  • 1/2 cup shredded cheese (mozzarella or cheddar)
  • 1/4 cup grated Parmesan cheese
  • 2 eggs, lightly beaten

You can season your crust if you want a little extra flavor, with a 1/2 tsp of oregano or 1/4 tsp garlic powder for more taste. Or whatever herbal blends suit your fancy.

Chop up the cauliflower florets and run them through a food processor until they are crumbled up like rice. Then use a steamer to lightly cook the cauliflower bits to just lightly tender.

Now you need to wrap up the cauliflower in a towel or a few layers of cheesecloth and really squeeze to drain all the water out that you can. Let it drip and drain for several minutes. Meanwhile, start up the oven to 400F.

Stir the cauliflower pulp in with the cheeses and egg (and spices if you’re using them). Give it all a good blending and then spread out the “dough” onto a pizza pan or baking sheet. Bake for about 20 minutes, and then add your usual pizza toppings. Bake again to finish for about another 10 minutes.
