This is a fast chicken dish that is full of flavor but low in fat. When you’re in the mood for this Italian classic, don’t shy away from it when you have this healthier option.
- 1 tbs olive oil
- 2 chicken breasts, skinned and boneless
- 2 tbs seasoned bread crumbs
- 2 tbs Parmesan cheese, grated
- 1/2 cup marinara sauce
- 2 cloves garlic, minced
- 5 cups baby spinach leaves
Use a kitchen mallet to pound your chicken breasts flat, to about a 1/4 inch thickness. In a small bowl, mix together bread crumbs and cheese, then use to coat your chicken. A light brushing of oil can help everything stick.
In a large skillet, heat up the oil and saute the minced garlic for a minute. Then add the chicken, and cook for about 3 minutes on each site (cook longer if you’ve left your chicken pieces thicker than 1/4 inch). Pour the marinara sauce over the chicken and push to the side of the pan. Let that continue to stay hot, and add the spinach leaves to the pan. Keep turning the spinach over the heat until cooked and wilted. Now it’s ready to serve.
