What is nicer than a zesty curry recipe on a cold night?

Add a little spice to your paleo diet with this easy curry recipe. You can use pretty much any meat you want so it’s flexible too. You’ll need a well-stocked spice rack but the recipe is otherwise simple to make. All of the spices listed below are dried and ground, unless otherwise mentioned.

  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp cardamon
  • 1/2 tsp black pepper
  • 1/4 tsp tumeric
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp chili powder
  • 1 large onion, diced
  • 5 garlic cloves, minced
  • 2 jalapeno peppers, chopped
  • 1 cup coconut milk
  • 3 tbs fresh basil leaves, minced
  • 1 pound of your choice of beef, lamb, chicken, pork (cubed)

Mix all the dried spiced together and then set them aside for later.

In a pan, saute the meat until its all cooked and browned. Remove the meat from your pan and start cooking the onion, garlic and pepper until it’s all cooked and tender. Toss the pieces of meat back in and then sprinkle the spice mix through everything. Keep cooking for about another minute more until the flavors are nicely blended.

Stir in the coconut milk and basil. Continue to cook on simmer until the sauce starts to thicken up. Serve over vegetables or enjoy on its own.
