Ginger Chicken

Paleo ginger chicken for a simple tasty meal

This is a very simple paleo chicken dish to make that only takes a few minutes to get ready and less than an hour to cook. Even with just a few ingredients, it packs a flavor punch. Zesty and delicious. I suggest making this next time you need an impromptu paleo meal.

  • 1 1/2 pounds chicken thighs
  • 1 small white onion, chopped
  • 1 tbs vegetable oil
  • 1 chunk of fresh ginger
  • 2 tbs red onion, diced
  • 1 green onion, diced
  • Salt and pepper to taste

Firstly, a “chunk” of fresh ginger should be around 1 x 2 x 1/2 inches in size (just guess, you don’t have to measure). Peel and slice it up before you start.

Toss the ginger, onion and oil in a pan and saute for about 3 minutes until the onion softens up nicely. Add in the chicken, salt and pepper. Cover and simmer on low for about 40 minutes. Stir in the red onion just before you take it off the heat, and let cook for another minute or two. Serve with a garnish of green onion.
