Low-Fat Lentil Soup

Low-fat lentil soup is hot, delicious, and high in both fiber and protein.

The smell of spices will take over your kitchen as this low-fat lentil soup simmers away on the stove. This is a great healthy recipe that fits lots of mindful eating plans, so hopefully it will suit your plans for dinner tonight.

  • 2 tbs olive oil
  • 1 cup onion, diced
  • 1/2 cup carrot, chopped
  • 1/2 cup celery, chopped
  • 2 tsp salt
  • 1 pound dry lentils
  • 1 cup tomatoes, diced
  • 2 quarts vegetable broth
  • 1/2 tsp coriander, ground
  • 1/2 tsp cumin, ground

In a large cooking pot, saute onion, carrot and celery in oil until the onion softens up. Sprinkle in the salt. Add in the rest of the ingredients and give it a stir through.

Turn up the heat and bring everything to a boil, then reduce it down to simmer. Let it cook on a simmering heat for about 40 minutes (or until the lentils are tender). Serve your lentil soup hot right away, or use a stick blender in the pot to puree it for a smoother dish.

Serves about 6 bowls of low-fat lentil soup.
