This quinoa salad has a Middle Eastern flavor to it, and is similar to tabouli (which is normally made with bulgur). This superfood version is made with quinoa, along with a number of other tasty fresh vegetables and an herbal oil dressing.
- 1 cup quinoa
- 2 cups water
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/4 cup lemon juice
- 3 tomatoes diced
- 1 cucumber, diced
- 1 bunch spring onions, diced
- 2 carrots, shredded
- 1/2 cup fresh parsley, chopped
- 2 tbs fresh mint, chopped
Cook up the quinoa first, simmering it in water for about 15 minutes. It should be cooked and soft. Set it aside and let it cool down.
In another bowl, you can mix together all the remaining ingredients while the quinoa is cooling. Add in the quinoa and give it a good stir through. You can either serve it right away, or let it chill further in the fridge first.
