Red wine marinade is a tasty way to use more superfoods in your cooking

A good red wine marinade can really make a difference in a recipe, to add flavor and healthy compounds to any meal. Depending on the specific recipe, you can use red wine in a marinade for either beef or chicken. For either recipe given here, you should choose a dry red wine.

Marinade for Beef
The first recipe here is for a red wine beef marinade.

  • 1 cup red wine
  • 3/4 cup olive oil
  • 1 tbs lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 5 cloves garlic, minced
  • 2 tbs onion, diced
  • 2 sprigs of fresh rosemary

Stir everything together and use to marinade your beef. This amount should do around 2 steaks, and the meat should soak in the marinade for about 6 hours (stirring periodically). Prepare your steaks anyway you wish.

Marinade for Chicken
And here is another variation that will work well for chicken. You’ll get just over 2 cups of marinade so it will do several pieces of chicken (either white or dark meat).

  • 2 cups red wine
  • 1/2 cup olive oil
  • 1/4 cup soy sauce
  • 4 scallion onions, chopped
  • 2 cloves garlic, minced
  • 2 tbs brown sugar
  • 1 tbs Worcestershire sauce
  • 1 tsp fresh grated ginger

Mix everything in a saucepan and boil for about 10 minutes, and then left to cool. Soak your chicken pieces in this sauce for several hours, or use it for basting. Either way will work well.

Just remember that you should always discard remaining marinade sauce because its been in contact with raw meat. You can marinate more meat in it right away if you wish but never use it as a dipping sauce or pour it over your cooked meat.
