Spicy Cucumber Peanut Salad

This is a Middle Eastern blend of cool cucumber and several zesty spices. The peanuts give this vegan salad a little extra protein and some tasty crunch. You can always leave out the pepper if you prefer a little less heat, or swap it for a hotter one if you really want some zing.

Spicy cucumber salad is a great blend of tastes and is still vegan.
  • 3 mid-size cucumbers
  • 1 jalapeno pepper, minced
  • 1/2 cup peanuts (roasted but unsalted)
  • 2 tbs lemon juice
  • 1 tsp sugar
  • 1 tbs sunflower oil
  • 1/2 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • 1/2 tsp salt
  • Chopped cilantro to taste

Scoop out the seeds from the cucumbers, and then dice them up (chunk size is up to you). In a large salad bowl, mix the cucumber with pepper, peanuts, lemon juice and sugar.

In a pan, heat sunflower oil until hot and add the mustard seeds. When they start to pop, add cumin and heat about 30 seconds for them to toast nicely. Add salt and pour out into the salad bowl. Serve immediately and topped with a little cilantro.
