This tofu cheesecake recipe is for a basic cheesecake. You can add raspberry or cherry sauce, or a drizzle of chocolate if you want a little extra sweetness and flavor. Not only does it add some healthy tofu to your diet, it is actually quicker to make than the traditional type. Though made with tofu, this just as sweet and creamy as any “normal” cheesecake recipe.
- 1 package of soft tofu
- 1/2 cup milk
- 1/2 cup sugar
- 1 tbs vanilla extract
- 1/4 cup maple syrup
- 1 unbaked graham cracker crust
Before you begin, you should drain your tofu as much as possible. Pour off the water and wrap it in paper towel. Set a plate or something on top to gently press down (don’t crush it!) and let the towel absorb the extra moisture. After that, get the oven started to 350F.
Blend together all the ingredients except the crust, using a hand mixer or a blender. Pour the mixture into the cracker shell and bake for about 30 minutes. Let it cool and serve chilled with whatever topping you like.
