Tofu Tacos

Have a Mexican fiesta with vegetarian tofu tacos

My daughter has a real thing for tacos, and now we can make them on Meatless Monday too. Firm tofu makes a great vegetarian meat-replacement that you can hardly notice under all the zesty spices. These are served with your usual taco shells along with a mix of tofu, traditional Mexican spices and some veggie toppings.

  • 1 16-oz pkg firm tofu
  • 1 tbs vegetable oil
  • 1 clove garlic, minced
  • 1/2 cup onion, chopped
  • 2 tsp chili powder
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1 tbs lime juice
  • 1/2 cup tomato sauce
  • 1/4 cup fresh cilantro, chopped
  • 10 taco shells (hard or soft)

Optional toppings:
• 2 cups shredded lettuce
• 2 tomatoes, diced
• 1 avocado, diced
• 1 cup shredded cheese
• 1/2 cup salsa
• 1/2 cup sour cream

Crumble up your tofu, and fry in oil along with the onion and garlic for about 5 minutes. Stir in chili powder, paprika, cumin, salt, lime juice and tomato sauce. Keep on cooking for another 3 or 4 minutes then add the cilantro. Give it a stir to combine and then take it off the heat. Serve up your “meat” mixture into warmed taco shells, and top with your choice of extras.
